Job Description
Responsibilities
Ensuring the quality of potatoes issued for production is as per standard specifications
- Conduct sample frying and COOK Test to check factors like:
- Percentage of undesirable color
- Internal defects
- Greening percentage
- Provide status reports to the Agro Department and indicate the number of pickers required.
- Decide whether the lot should be accepted or rejected.
- Conduct Cook’s Test periodically and as required for long-term stored potatoes.
Conducting online quality checks in the process area to ensure adherence to FLI standards
- Visual inspections:
- Verify key operating parameters of machines (Peelers, Fryers, Slicer, Chip Conveyors, Seasoning Tumbler).
- Ensure potatoes are properly peeled every hour in the trim and pare area.
- Check slice thickness and free surface moisture every 4 hours.
- Decide on the introduction of anti-foaming agents as needed.
- Record dwell times from the operator’s logbook every 4 hours.
- Check seasoning levels applied.
- Analytical tests:
- Perform Hunter Color Test for blanching decisions.
- Conduct 4-hourly checks on fryer oil for quality parameters like FFA, OV, PV, taste, odor, etc.
- Compare oil test results with standard charts.
- Decide on the mix of fresh and blended oil for frying operations.
- Test fried chips hourly for parameters like PA, oil percentage, soft-centered chips, and more.
- Measure bulk density, moisture, seasoning, and dimensions for Non-PC products.
- Take corrective actions based on test results:
- Provide feedback to operators.
- Inform Agro Department to change potato lots if defects are large.
- Notify Quality Manager in case of critical issues.
Online quality checks and finished product inspections in packaging
- Ensure half-hourly checks for air leakage and hourly checks for weight, batch printing, and air fill.
- Conduct analytical tests:
- Nitrogen Flushing Tests every 4 hours to check oxygen percentage in bags.
- Random film quality checks in response to complaints.
- Address concerns promptly with operators and managers.
Monitoring machines in process and packaging areas to ensure quality
- Calibrate machines like MM55 for moisture and oil content.
- Ensure slicer blades and peeler rollers are changed periodically.
Maintain accurate reports for communication
- Ensure end-of-shift reports are circulated and filed daily.
- Prepare Weak Link Forms, Daily Quality Reports, and Quality Control Reports (QCR).
- Submit weekly and monthly reports for air leakages, oil picks, etc.
Conduct regular quality meetings and audits
- Coordinate “Take Action Wall” and “Mini Wall Meetings” for issue resolution.
- Lead weekly housekeeping audits to ensure safety and hygiene compliance.
Handle hold material to minimize wastages
- Ensure hold material is cleared within 48 hours.
- Submit detailed analysis reports and assign NCD Tags for hold material.
Ensure adherence to statutory laws
- Maintain awareness and accurate records for statutory compliance.
Resolve customer complaints effectively
- Assist in root cause analysis and implement action plans to prevent recurrence.
Participate in TPM activities and foster a growth-oriented culture
- Lead/participate in TPM projects.
- Promote quality standards and implement cost-effective quality measures.
Implement change initiatives and continuous improvement
- Identify areas of improvement and execute action plans.
- Ensure compliance with SOX and act as a Control Owner of the I2C process.
Document quality procedures systematically
- Maintain records of findings, hazards, and corrective actions.
Continuous learning and self-improvement
- Seek feedback and reflect on competencies.
- Set and monitor learning goals in consultation with seniors.
Qualifications
- Education: B.Tech (Food Technology).
- Experience: 3 to 5 years with exposure to food safety systems and ISO systems.
- Preferred Knowledge: HACCP/AIB and TPM.
